Coconut Milk Chicken

I put this together using Wardeh’s method of building your own skillet dish.
Sarah says that this dish is not appetizing looking…. so you might want to add some chopped veggies, lightly cooked. I suggest red bell pepper, summer squash and red onion. How it looks doesn’t matter much to me, it tastes divine!
Coconut Milk Chicken
Spice mixture ~ In a small bowl combine:
1 tsp ground cumin
1/4 tsp ground cayenne pepper or more to taste. I used a teaspoon today and its almost too much for us!
1 tsp tumeric
1 tsp ground coriander
Toss spice mixture with 3 cups cooked, deboned chicken, cut into chunks
Rest of ingredients
salt and pepper to taste
1 tbls olive oil
1 medium onion, slivered
2 cloves garlic, minced
3 whole tomatoes, seeded and chopped
1 14 oz can light coconut milk
1 handful chopped fresh parsley
Toss the chicken with the spice mixture, let it sit for about 5 minutes.
Heat a large skillet over medium high heat, add the olive oil, onions and garlic, cook til the onion is tender but not browned.
Add the chicken, tomatoes and coconut milk. Heat to simmer, reduce heat and simmer on low for 10 minutes. Add a little water if it is too dry for your tastes. Add salt and pepper to taste. Add parsley and serve over brown rice.

















Hmmmm, Sylvia, did you change this recipe? I don’t remember there being a “spice rub marinade” and I do remember there being sweet basil and olives in it. It was rather greek….is this the same recipe?

I just re-read my notes, the other recipe had fresh oregano in it as well……
Okie, dokie, you are talking about a variation that I sometimes make. Everything is essentially the same as far as cooking time and the coconut milk. The herbs are as you mentioned, basil and oregano. I use sliced black olives as well. I use 1 - 15 oz can of diced tomatoes or you can use crushed tomatoes if you like that. I also add 1/4 cup nutritional yeast. If you are not used to that flavor, you might want to use just a couple of tablespoons and taste before adding more.
