Oyster Stew

2 T butter
2 T flour
2 cups milk
1/2 cup chopped onions
1- 8 oz container fresh oysters, drained
1/2 T cajun spice mix or seafood seasoning
1/2 T dry parsely
1 tsp Worcestershire sauce
2 -3 oz mild cheese
salt and pepper to taste
Heat the butter in a medium sauce pan, add the onion and cook til transparent. Add the oysters, heat til warm. Add flour and stir around to coat the oysters and onions. Cook for about 3 minutes.
Add seasonings and milk. Add cheese. Heat til very hot but not boiling.
Serve!

I have a similar story about my wedding ring~ my diamond fell out but I did have it… it sat in a ziploc bag for year or two… then one year my DH asked me to renew our wedding vows at church on mother’s day!! Talk about shocked!! Of course, I agreed… when it came to time to do the rings, he put my diamond ring on my finger, he had gotten it fixed for me!
He can be such a sweetheart… but hides behind a “manly” veneer most of the time!

We had the oyster stew tonight…. it was just scrumptious! Warming and really hit the spot. The Cajun seasoning was just the lightest bit hot and it lent itself very well to the stew.
It was my own Grandfather who introduced me to oyster stew. His recipe was just oysters, butter, pepper and milk heated very hot and little oyster crackers floated on top.
