Chili Beans

Chili Beans
This is an easy, very tasty main dish using whole foods
2 cups dried pinto beans cooked according to the instructions
1 lb organic ground beef, elk or ground turkey
2 cups uncooked brown rice
1 yellow onion - chopped
2 cloves garlic - chopped
2 Tbsp olive oil
1 to 2 Tbsp chili powder
1 -2 tsp cumin
1 Tbsp chopped parsley
2 cups chopped fresh tomatoes or 1 - 15 oz can tomatoes and juice.
Sea Salt
Black pepper
1 tsp agave nectar or honey
1/2 cup of fresh cilantro leaves
You can spice this up by using 1/2 cup hot salsa or 1 seeded jalapeno pepper, diced. Be Very Careful With the Pepper! Wear gloves to seed and chop.
Brown the meat, drain well. Cook the rice with 4 cups water and 1 tbsp of the olive oil.
Saute the onions in 1 tbsp of the olive oil. When the onions are translucent, add the garlic and cook just 30 seconds.
Combine cooked beans, tomatoes, chili powder, parsley, cumin, agave syrup, onions and garlic. Turn the heat to low ans simmer for 20 minutes.
Season to taste with salt and pepper. Add chopped cilantro leaves before serving over hot cooked brown rice.
