Lentil - Barley Stew

Lentil Barley Stew
Cheap, easy and very delicious. This stew can be made using no meat, or add some pieces of fresh pork to the celery and onion to cook before adding the rest of the ingredients.
In a large kettle, saute’
1/4 cup oil
3/4 cup celery, chopped
3/4 cup onion chopped
Add:
6 cups water or beef broth
3/4 cup lentils
Cook 20 minutes and then add:
1 quart homecanned tomatoes
3/4 cup barley (or use brown rice)
2 tsp salt
1/4 tsp black pepper
1/2 tsp dry rosemary
1/4 tsp garlic powder
Simmer 45 minutes to 1 hour. Add 1/2 cup shredded carrots, cook 5 more minutes and serve.
