Is It Spring Yet?

No, I guess not. I sure do need a good dose of Spring though. This cold weather getting old.
I don’t know if I could survive living up north or in the mountains of my own state. I am a sunshine girl all around
At least the ice storm warning is over and we’re ice-free.
Well, I have most of my daily chores done, laundry done, school done, lunch over and some free time on my hands. I think I will go read and cogitate.
Sometime this week I hope to post the recipe for the Vermont Chicken and Apples. It was really tasty and the whole family liked it. I think I will prepare it for Sunday Dinner this week. It calls for apple brandy. Well, I’m not going to go buy a bottle of apple brandy so’s I can have it for one dish! I did have some regular brandy on hand from Christmas baking and used it but frankly, I think it would be just as good without it. The recipe contains apple juice as well as the brandy and I think the juice really infuses a nice flavor into the chicken, without the brandy. It has a light cream sauce and little pieces of shallots, some thyme. Really good. I served it over brown rice, but regular rice or noodles would be good.
Anyhoo, I was wondering what apples and chicken had to do with Vermont. I found out that this particular recipe was developed at the Governer’s Inn in Ludlow, VT. Apparently they even have a cooking school. I’ll try to get it up here sometimes soon.

We are all going stir crazy… almost a heavy depressed feeling up here in IN! I’m ready to get outta here! I belong in the south… Sunny Februarys are in my blood! We’ve had wayyyy too much ice/snow this year.
