Homemade Eggless, Vegan Mayonaise Recipes

I did not develop these recipes but I have changed them to reflect my family’s tastes. Which means you can change them too if you want to!
No egg Real Mayonnaise
Ingredients:
1/2 teaspoon dry mustard
1/2 teaspoon salt
1/8 teaspoon ground black pepper
1 tablespoon fresh lemon juice
1 cup oil
Using a food processor or blender mix:
Mustard, salt, pepper, and 2 Tablespoons oil.
Keep the blender on high, add lemon juice and in a very slow stream, add the rest of the oil in a slow stream. This should all at once get thick and turn white.
Immediately turn off blender. Keep refrigerated.
Tofu Mayonaise
1 - 12.3 oz. pkg. extra-firm silken tofu
2 T. cider vinegar or lemon juice
1 and 1/8 tsp. salt
1/2 tsp. dry mustard
1/8 tsp. white pepper
2 T. extra-virgin olive oil
1 tsp maple syrup or agave nectar
Combine the ingredients in a food processor and blend until very smooth and creamy. This will keep for about 2 weeks in the refrigerator if you keep it tightly closed in a clean jar.
