Curried Beef and Coconut

Curried Beef

Ingredients
2 Tbsp oil
1 # lean beef. Freeze the beef, defrost slightly and slice into thin pieces
1 (14.5 oz) can plum tomatoes,undrained, sliced
2/3 cup coconut milk (unsweetened)
1 small onion,chopped
2 Tbsp sweet red pepper, chopped
2 Tbsp green pepper, chopped
1 or 2 tablespoons curry powder
1/2 teaspoon salt
hot cooked brown or white rice
For garnish:
raisins, chopped salted peanuts and unsweetened flaked coconut
In a large saucepan, heat the oil. Add the meat and cook, stirring, until no longer pink. Add tomatoes, coconut milk, peppers, curry, salt. Lower heat, cover and simmer about 10 minutes.
Serve with rice and garnishes
Yield: 4 servings
Note: The coconut milk can be left out. You may want to add a bit of beef broth or water to make the mixture a little more soupy if you leave out the coconut milk.
