Spaghetti Soup ~ Southernized

My good friend Karen shared a recipe for Spaghetti Soup on the T2CHK Message Board. It is a delightful, fresh tasting soup! She may have shared it on her blog, so run go see!
We have had Spaghetti Soup several times and I felt it was time to “Southernize” it a bit. So here is my version of Spaghetti Soup
Southernized Spaghetti Soup
4 cups water
2 envelopes of Lipton or Campbells Chicken noodle soup OR use 4 cups of homemade chicken broth and omit the water and soup mix.
1 can diced tomatoes
Bring to a boil and add:
1 handful of broken spaghetti or other pasta. If you are not using the soup mix, increase this to two handfuls.
1/2 tsp black pepper
1 tsp italian seasoning or use 1/4 tsp each oregano, thyme and fennel
1 T dry parsley or 2 T fresh, chopped
1/4 tsp garlic powder ( don’t use garlic salt if you use the soup mix! )
salt to taste
Cook til the noodles are tender
When its done, ladle it into bowls and grate fresh parmesan cheese over it! YUM! Thank you Karen!

I like your changes Sylvia!! Robin and I have enjoyed giving it a mexican twist with less pasta and adding pinto beans or black beans, salsa, cheeses and sour cream. It really is a basic soup you can throw just about anything in!
