Hummus Fer Lunch And Kielbasa With Spaghetti Squash Recipe

We’ve got about 2 inches of snow right now. Its been snowing all morning and every once in a while we gt a burst of heavy snow. We’re all hoping it will keep coming down til tomorrow. DD#1’s school was canceled today but the little ones are having their school. We’re almost done
I made some hummus for lunch to go along with whole grain tortilla chips and carrots. I cooked the garbanzo beans in the pressure cooker so they were good and soft and ready in about 45 minutes. I added peanut butter, salt, garlic, lemon juice, cumin, olive oil and roasted red bell peppers. Yummy! And pretty; its orange with red flecks. I’m glad the children like this stuff, I would probably not make it just for me. :) We had green tea to go along with it and those who felt the need, had a beef patty.
Supper tonight will be kielbasa with brown rice and spaghetti squash. I cut up and cook the sausage with some onion and garlic and cook the squash and rice separately. Then I scoop out the squash, season it with a pinch of salt and parmesan cheese (I am going to experiment with nutritional yeast today) and serve the kielbasa/onion/garlic mixture over the squash. If you are careful of what kind of kielbasa you buy, you can find some good varieties that have little fat in them, they are the best for this dish. I serve the rice on the side seasoned with lemon pepper, fresh parsley and a little butter. Also on the side, my family likes a green veggie with this meal, I will probably cook some frozen green peas today.
